Crock Pot: Low Sodium Taco Soup

It has been cold. I guess I thought it would take longer for the weather to make the switch, but we are suddenly fully immersed in autumn. Although I use my crock pot all year, it gets a workout in the fall. If I didn’t have to clean it in between meals I probably would have it going all the time. Like a Scentsy burner, but more rewarding in the end.

We have a super easy recipe that is perfect if you want some soup, but don’t want to go to too much trouble. I got this one from my mother in-law who has some pretty amazing recipes if i do say so myself! I specifically asked for this one because it was so yummy. I had no idea how simple it was too – SCORE!

Low Sodium Taco Soup – 635mg total (6 hardy servings)

  • t tbsp olive oil
  • 1 small yellow onion
  • 1 lb ground beef – 300mg total
  • 2 cans of no-salt added diced tomatoes – 140mg total
  • 2 cans of no-salt added black beans – 60mg total
  • 1 can of no-salt added kettle corn – 35mg total
  • 1 small can of no-salt added tomato paste – 100mg total
  • 1 jar of Mrs. Dash Fiesta Lime seasoning (depending on taste)

In a skillet over medium heat, add the olive oil and onions, saute for a few minutes. Add in the ground beef and brown it until fully cooked.

In a crock pot, add in the undrained cans of diced tomatoes, beans, corn, tomato paste, and then add in the beef. Add the Mrs. Dash Fiesta Lime seasoning to your preferred taste (we like spicy tacos so we add in one full jar). Cook on low for 4-6 hours.

We serve it over some crumbled Garden of Eatin’ No-Salt Added Tortilla Chips and a little grated cheese. You could add in sour cream if you like that as well. ENJOY!
