I thought I didn’t like mango salsa; but then I tried this recipe! I think the pre-made processed salsa has a little mushy, tasteless quality about it that I’m not to fond of. And I struggled, though it might just be me, to find the right balance between fruity/sweet and the spicy/salsa-ish flavor. Maybe I’m […]
We have our friend Mike here from California. He is on leave with the Marines and we are so happy to be hanging out with him like old times. He was the best man at our wedding, and I’ve only known my husband approximately 5 days longer than Mike. We have been friends for years now, and I think of him more like a Brother than one of Derrick’s friends.
On the first full day he was at our place, the weather was dismal, and he mentioned that soup sounded really good. So, I decided to make some for dinner! I had it on the menu plan (yes, I started a menu plan) for Sunday, but I shifted a few things around and BOOM. Soup night.
My friend Ashley told me that she had found this on Pinterest and it was absolutely amazing. Well, my friends, it was pretty darn good. I’m sure extra sodium would come in handy to most (Mike added some salt) but to our low-sodium brothers and sisters this is one flavorful dish! Derrick ate approximately three bowls of it and Aidan exclaimed “MMMMM!” when he had his first few bites. So… whatever that is worth. I like it too, and had it again for lunch today. Not sure if it got better or if I just didn’t realize how good it was last night. This one is definitely going in the rotation.
This recipe has been adapted from RiverNorthPaleo’s Recipe to meet our low sodium requirements. Also, the picture that I took from my phone is crappy, so this is her’s too!
Gluten-free seems to be a “new-ish” thing; at least to me. But now that it has hit my radar, it seems like I can’t escape it! It’s everywhere! What I love with this new-found interest in gluten though is that our marketplace is truly turning to more healthy alternatives in their varieties. I’m sure that […]
One of my absolute favorite things is something that not everyone knows about – Dukkah. It’s a Middle Eastern spice mix that caught my attention on SmittenKitchen.com where she made chicken skewers with this lovely spice mix, served with a honey balsamic sauce. Talk about GOOD. It is a little “different” and definitely out of […]
Who knew there are variation in taste between different vinegars? I mean, it’s vinegar right? Aren’t they all going to taste overwhelmingly strong, and about the same when mixing them into sauces and salad dressing? Apparently not. This tid-bit came as quite a surprise to me when we went to the Cheesecake Factory, and my […]
I came to know this recipe from a dear friend, while we were roommates in college. She had a real knack for amazing meals that were I quick and easy, which I admired (and still do)! Of course, this was before low sodium (BLS) days so slight modification was necessary. Just as all working moms […]
Last night, after the gym, my husband promptly drove me to the grocery store. “What are we doing here?” I had to ask, as I was baking in the 100 degree car in my gym clothes. “Do we have avocados?” “Yes, why…??” “Would you please make your guacamole? I’ve been craving it!” Now, who could […]

Can you believe that summer is already over and we are on our way through September??? Seriously, the time is going by SO fast! I feel like it should be February… maybe the time will lap my internal clock and then I’ll finally be ‘caught up’ again. Labor Day was a blast though! We went […]
